Aubergine Parmigiana….absolutely delicious and family friendly.

Serves 4
Ingredients:
3 aubergine Ball of Mozzarella 1 white onion, finely chopped 1 clove garlic, crushed Extra virgin olive oil Spray olive oil White wine vinegar, cap full Bread crumbs, couple of handfuls Fresh basil 1 heaped tsp of dried oregano 2 tins of chopped tomatoes Salt and pepper Parmesan
Method
1. Heat fan oven to 190 degrees Celsius 2. Slice the aubergine into thin rounds 3. Spray a couple of large trays with oil, line up the aubergine upon it, salt, spray the tops with olive oil and then bake until soft. 4. In a large frying pan heat 3 tbsp of olive oil, add the onion and soften for approx 10 mins. Add the garlic and oregano. Finally stir through the chopped fresh basil. Season to taste. 5. Add the chopped tomatoes and stir through the onions. Allow to simmer for approx 15 mins until it’s reduced and thick. 6. Grab a baking dish. 7. First add some tomato sauce. 8. Grate in some Parmesan. 9. Add a layer of aubergine. 10. Repeat two more times. 11. Cover the top layer with bread crumbs 12. Add dollops of mozzarella 13. Bake for 15 mins until golden and enjoy.
