Insalata Caprese...wonderful this time of year as the tomatoes are so fresh and flavourful


Serves 2


Ingredients: - Buffalo mozzarella (now sold in asda!) or fresh quality mozzarella - Good quality Extra Virgin Olive Oil (EVOO) - Dried oregano (not fresh) - large salt flakes ie. Maldon salt - Ground black pepper - Fresh basil leaves - Fresh rye sourdough or other rustic bread (to served with the salad)



Method:

1. Cut tomatoes into large bite size pieces and halve cherry tomatoes (think rustic) 2. Chop wedges of mozerella and place around the dish 3. Drizzle EVOO on top 4. Sprinkle oregano over the top 5. Sprinkle salt over the top 6. Sprinkle over ground black pepper 7. Pull basil leaves rather than cut and place around the dish 8. Rest salad in the fridge, serve and enjoy with bread
