Orzo with herby tomato sauce and feta ….easy to make, tasty and family friendly



Ingredients:

1 tbsp extra virgin olive oil

300g dried 0rzo and salted boiling water to cook it in

1 white onion, finely chopped

3 garlic cloves, minced

1 tin chopped tomatoes

1 tin of cherry tomatoes in tomato sauce

1 1/2 tbsp tomato puree

1 tbsp dried oregano

2 tbsp of frozen parsley

pitted and halved kalamata olives

feta

lemon to serve (optional)


Method:

  1. Heat the oil and fry the onion until soft

  2. Stir in the puree and oregano until combined

  3. Add the tomatoes and olives, bring to the boil and simmer for 15 minutes

  4. Cook the orzo in salted water until al dente, drain and season

  5. Mixed the cooked orzo into the sauce

  6. Stir in the parsley, season to taste

  7. Serve topped with crumbled feta and a a lemon wedge
