Puttanesca .....the perfect store cupboard dish for when the fridge is almost empty!


Serves 4


Ingredients:

8 anchovies

7 garlic cloves, crushed

2 tbsp extra virgin olive oil

1 tin chopped tomatoes

fresh or frozen parsley

2 tbsp capers

1 jar black olives

1/2 pack of wholemeal spaghetti


Method:

  1. Heat the oil in a frying pan and add the anchovies. Allow it to melt.

  2. Add the garlic and fry but careful not let it burn

  3. Add capers, the olives and follow with the tinned tomato

  4. Simmer for 35 mins

  5. Boil the spaghetti in salted water until al dente

  6. Add the parsley at the end and enjoy!
